Joanna's Chicken Casserole
- 3 lbs boneless skinless chicken breasts or 3 lbs chicken pieces
- 4 teaspoons oil
- 2 large onions, chopped
- 4 garlic cloves, minced
- 2 teaspoons oil, plus extra if needed
- 4 teaspoons lemon juice
- 2 teaspoons grated lemon peel
- 2 cups tomato sauce or 2 cups ketchup
- 2 teaspoons brown sugar
- 2 teaspoons dry mustard
- 2 teaspoons curry powder
- 4 teaspoons red wine vinegar (I used apple cider vinegar)
- 2 teaspoons teriyaki sauce or 2 teaspoons soy sauce
- salt & pepper, to taste
- Saute chicken in hot oil until golden brown; remove from pan and drain.
- Pour off oil from pan and add rest of the ingredients, stirring until pan brownings are disolved.
- Add chicken and cook on low heat until tender.
