Black Bean Salsa
- 1/2 c. cooked corn kernels
- 2 tbsp. diced green chilies
- 2 c. cooked black beans
- 1/2 c. fresh tomatoes, chopped
- 4 tbsp. olive oil
- 2 tbsp. chopped fresh cilantro
- Juice of 1 lime
- Mix all the ingredients together except for the lime juice.
- Add the lime juice immediately before serving.
- To reduce fat and calories, serve with baked tortilla chips, toasted pita triangles, or fresh vegetables.
