Broccoli Spaghetti
- 16 oz whole wheat thin spaghetti
- 3 bunches broccoli-cut into florets
- 1 medium onion, chopped
- 1 clove garlic-minced
- 1 tbsp evoo
- 15 oz reduced-sodium chicken broth
- 1 pints cherry tomatoes-halved
- 1/2 tsp red pepper flakes
- 1/4 cup reduced-fat grated parmesan cheese
- Prepare spaghetti according to package directions
- Meanwhile, in skillet over medium heat, cook broccoli, onion and garlic in hot oil about 5 minutes
- Add broth and tomatoes; bring to a boil and cook 7 minutes or until tender
- Drain pasta and place in serving bowl; top with broccoli mixture, red pepper flakes and cheese
- Toss well
