Ceviche

  1. Note: I have played around with different types of seafood, and my favorite combo is squid, scallops and shrimp.
  2. Take chopped calamari fillets, shrimp and scallops, and put in a bowl.
  3. Then add lemon or lime juice over the seafood until it is covered.
  4. Give it a good stir and then set aside while you work on the seasonings.
  5. The seasonings are simple: tomato, red onion, a handful of cilantro, serrano pepper, and garlic.
  6. Chop everything and add to the bowl containing the marinating seafood.
  7. Let it marinate overnight.
  8. Serve over lettuce leaves and enjoy!
