Ceviche
- 1 pound Calamari Fillet, Chopped
- 1 pound Shrimp
- 1 pound Scallops
- Lime Or Lemon Juice Concentrate, Enough To Cover Seafood
- 1 whole Tomato
- 1 whole Red Onion (only Use Half)
- 1 bunch Cilantro
- 1 whole Serrano Pepper
- 3 cloves Garlic
- Note: I have played around with different types of seafood, and my favorite combo is squid, scallops and shrimp.
- Take chopped calamari fillets, shrimp and scallops, and put in a bowl.
- Then add lemon or lime juice over the seafood until it is covered.
- Give it a good stir and then set aside while you work on the seasonings.
- The seasonings are simple: tomato, red onion, a handful of cilantro, serrano pepper, and garlic.
- Chop everything and add to the bowl containing the marinating seafood.
- Let it marinate overnight.
- Serve over lettuce leaves and enjoy!
