Georgia Greens with Raw Vegetable Relish

  1. Greens: Snip turnip leaves from stems; discard stems.
  2. Wash leaves thoroughly.
  3. Drain.
  4. Brown salt pork on all sides in heavy kettle; add water and boil, covered, for 10 minutes.
  5. Add greens and pepper pod.
  6. Cover and cook for 20 minutes.
  7. Drain; reserve pot liquor to serve in cups with main dish at dinner.
  8. Cut greens with scissors; slice pork and mix, adding salt, if necessary.
  9. Serve with raw vegetable relish.
  10. Relish: Dice tomatoes, cucumber and bell pepper.
  11. Add remaining ingredients.
  12. Serve with turnip greens.
