Greek Style Tomato Salad
- 6 medium size tomatoes, sliced
- 1 (4 oz.) pkg. crumbled Feta cheese (1 c.)
- 1 small onion, thinly sliced
- 1 (3 1/2 oz.) can pitted ripe olives, drained and sliced
- 1/3 c. olive oil
- 1/3 c. red wine vinegar
- 2 Tbsp. minced parsley
- 4 tsp. sugar
- 1/2 tsp. dried basil leaves
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- lettuce leaves
- About 2 1/2 hours before serving or early in day, place sliced tomatoes, Feta cheese, onion and olives in a 13 x 9-inch glass baking dish.
- In a small bowl with fork, mix olive oil, vinegar, parsley, sugar, basil, salt and pepper.
- Pour dressing over tomato mixture.
- With rubber spatula, gently lift tomato slices to coat with dressing.
- Cover baking dish and refrigerate at least 2 hours to blend flavors.
