Almond-Cherry Dessert
- 1-1/2 qt. Canned pitted dark sweet cherries, undrained
- 1 gal. Hot water (10 degrees F to 160 degrees F)
- 2 Tbsp. almond extract
- 1-1/2 pkg. JELL-O Brand Assorted Red Sugar Free Gelatin
- 3 cups sugar-free whipped topping
- Drain cherries, reserving 1 qt.
- of the juice (or 1/2 cup of the juice for trial recipe).
- Mix reserved juice, hot water and extract in large bowl.
- Add gelatin mix; stir until completely dissolved.
- Refrigerate 30 min.
- or until gelatin is thickened but not set.
- Stir in cherries.
- Pour 1/2 cup of the gelatin mixture into each of 48 (6-oz.)
- dessert cups (or into each of 6 dessert cups for trial recipe).
- Refrigerate until firm.
- Top each with 1 Tbsp.
- whipped topping just before serving.
