Almond-Cherry Dessert

  1. Drain cherries, reserving 1 qt.
  2. of the juice (or 1/2 cup of the juice for trial recipe).
  3. Mix reserved juice, hot water and extract in large bowl.
  4. Add gelatin mix; stir until completely dissolved.
  5. Refrigerate 30 min.
  6. or until gelatin is thickened but not set.
  7. Stir in cherries.
  8. Pour 1/2 cup of the gelatin mixture into each of 48 (6-oz.)
  9. dessert cups (or into each of 6 dessert cups for trial recipe).
  10. Refrigerate until firm.
  11. Top each with 1 Tbsp.
  12. whipped topping just before serving.
