Tomato-Cheese Pizza
- 4 English muffins
- 2 ripe tomatoes or 34 cup stewed tomatoes, drained
- 16 anchovy fillets
- 12 teaspoon rosemary
- 8 slices mozzarella cheese
- olive oil
- salt and pepper
- Break apart muffins.
- Toast until crisp.
- Thinly slice tomatoes and place 1 slice on each muffin half or place a tablespoon of stewed tomatoes on each muffin half.
- Add 2 anchovy fillets and a pinch of rosemary.
- Add another layer of tomato and top with a slice of mozzarella.
- Sprinkle with olive oil, salt and pepper.
- Place under broiler and broil until mozzarella is melted.
