Moroccan Style Chicken Recipe

  1. Heat oil in large, heavy kettle.
  2. Add in onions and garlic.
  3. Saute/fry till onion is translucent/soft.
  4. Fold in ginger, coriander and parsley.
  5. Add in salt and pepper to taste.
  6. Cook about 3 min.
  7. Wash and dry chicken pcs.
  8. Add in these to spice mix.
  9. Fry a few pcs at a time till golden on all sides.
  10. Add in more oil, if needed.
  11. Add in the broth and water.
  12. Cover and cook slowly for 40 min.
  13. Fold in lemons and olives and continue to cook 20 min longer, or possibly till all ingredients are tender.
