Oven Roasted Cornish Hens
- 4 cornish game hens
- 1 stick of butter
- 1 seasonings (creole/lawrys seasoning, garlic powder and black pepper
- 1 onion
- 3 garlic cloves
- 1 can of chicken broth
- preheat oven at 400F
- wash hens thoroughly and pat dry with paper towels
- rub these babies down with some room temperature butter, then season all over with seasonings
- slice the onion in rings and stuff some of them in the bird, the leftover onion can go around the pan
- smash and dice the 3 garlic cloves and add to the inside of bird or u can rub bird down with garlic before u season if u wish
- let birds sit 10-15 mins so seasoning can set in the meat
- put birds in oven at 400F let bake until seasoning and veggies are fragrant, and hens are golden brown about 15-20 mins
- turn fire down to 350F add chicken broth enough to cover the bottom, cover with foil and let roast for about an hour
- continue to baste with the juice periodically, this will allow the meat to be very juicy
- once hens are done let them rest a little while before cutting birds
