Southwest Chicken Casserole Recipe Melissa Rhamstine

  1. Cook chicken breasts in water until done (approximately 45 minutes).
  2. Allow to cool then dice into bite size pieces.
  3. Cook rice in chicken broth.
  4. Line bottom of a 13 X 9 x 2 casserole with rice.
  5. Layer the rest of the ingredients in the following order.
  6. Chicken, onion, salt and pepper, chili powder, soup, sour cream, cheese, rotel, optional jalapenos.
  7. Bake at 350 for 45 minutes
