Garlic Sauce

  1. Put olive oil, lemon peel and garlic in pan over medium-low heat.
  2. Stir until garlic is well incorporated.
  3. Add broth, water and herbs; simmer to reduce mixture by about half.
  4. Discard herb sprigs and lemon peel.
  5. Transfer broth mixture to a blender or food processor; process until smooth.
  6. Return the processor mixture into original saucepan and whisk in the butter over very low heat until well incorporated.
  7. Sauce can be rewarmed before serving.
