Fattigmand Bakkelse(Poor Man'S Cookies, Norwegian)

  1. Beat eggs; add sugar, salt, vanilla or almond extract, cardamom and cream.
  2. Stir in flour, a cup at a time.
  3. Dough should be stiff. Chill.
  4. Transfer a small amount of dough to a lightly floured surface.
  5. Roll dough to 1/8-inch thickness; cut in 2 x 3-inch diamond shapes.
  6. Make a lengthwise slit about 3/4 inch in the center of each diamond; gently pull one end of the diamond through the slit as far as possible.
  7. Do not tear the dough.
  8. Drop a few cookies at a time into deep, hot oil (more than 1 1/2 inches).
  9. Fry until golden brown, turning once, about 1 minute.
  10. Drain on paper towels.
  11. When ready to serve, sprinkle with powdered sugar.
