Fattigmand Bakkelse(Poor Man'S Cookies, Norwegian)
- 6 eggs
- 6 Tbsp. granulated sugar
- pinch of salt
- cardamom to taste
- 1 tsp. vanilla or almond extract
- 6 Tbsp. cream
- 5 to 6 c. all-purpose flour
- vegetable oil for frying
- confectioners sugar
- Beat eggs; add sugar, salt, vanilla or almond extract, cardamom and cream.
- Stir in flour, a cup at a time.
- Dough should be stiff. Chill.
- Transfer a small amount of dough to a lightly floured surface.
- Roll dough to 1/8-inch thickness; cut in 2 x 3-inch diamond shapes.
- Make a lengthwise slit about 3/4 inch in the center of each diamond; gently pull one end of the diamond through the slit as far as possible.
- Do not tear the dough.
- Drop a few cookies at a time into deep, hot oil (more than 1 1/2 inches).
- Fry until golden brown, turning once, about 1 minute.
- Drain on paper towels.
- When ready to serve, sprinkle with powdered sugar.
