Mashed Potato Salad

  1. Mashed potato preparation:
  2. Peel about 6 medium potatoes into a 3 quart pan.
  3. Cut potatoes as small chunks.
  4. Add 2 cups water and 1/2 teaspoon salt.
  5. Bring to boil.
  6. Cover, simmer
  7. 20 minutes. Drain.
  8. Add 8 tablespoons margarine.
  9. Cover, melt margarine. Coarsely mash with masher.
  10. Add about 1/2 cup evaporated milk. Beat with electric mixer on high.
  11. Add evaporated milk in small amounts and beat until smooth.
  12. Put 4 cups potatoes into large mixing bowl.
  13. Add remaining ingredients.
  14. Mix with wooden spoon. Chill.
