Frozen Mud Pie

  1. Preheat oven to 375 degrees.
  2. Crush wafers.
  3. Add melted butter.
  4. Mix well with a fork and press into a 9 inch pie plate. Bake 10 minutes.
  5. Cool completely.
  6. Spread ice cream carefully onto crust.
  7. Freeze 1 1/2 hours or until solid.
  8. In a saucepan, cook cocoa, 2/3 cup sugar, 1/3 cup cream and butter until mixture is smooth and boils.
  9. Stir in 1 teaspoon vanilla.
  10. Cool, but do not let mixture get too hard to pour.
  11. Pour sauce over frozen ice cream base.
  12. Freeze at least 1 1/2 hours.
  13. Before serving, whip remaining 1 cup cream with remaining 2 tablespoons sugar until soft peaks form.
  14. Add remaining 1 teaspoon vanilla and spread over pie.
  15. Garnish with chocolate shavings.
  16. Makes 10 servings.
