J.C.'S Vegetable Soup
- 2 turnips
- 3 large potatoes
- 1 large onion
- 1/4 head cabbage
- 4 small carrots
- 3 celery stalks
- 3 cans (15 oz.) mixed vegetables
- 2 cans chicken broth
- 1 (10 3/4 oz.) can tomato soup
- 1 1/2 qt. tomatoes
- 1 1/2 lb. ground beef
- 1 1/2 lb. soup meat
- 3/4 c. macaroni, uncooked
- 1/2 c. broken spaghetti, uncooked
- 3 bay leaves
- 1 tsp. Cajun seasoning
- 1/2 c. rice, uncooked
- 1/2 tsp. parsley
- 1/2 tsp. garlic powder
- salt and pepper to taste
- Cook soup meat in about 2 quarts of water until tender.
- Add ground beef and diced vegetables adding more water as needed. Cook until almost done.
- Add all other ingredients and let simmer until macaroni is cooked.
- Be sure and use a large soup kettle. Makes enough for company.
