Green Herbal Dressing Recipe
- 1 C. (tightly packed) fresh spinach leaves, rinsed, liquid removed
- 1 c. (loosely packed) fresh parsley leaves
- 1/2 c. cider vinegar
- 1 1/2 teaspoon dry basil, crumbled
- 1 1/2 teaspoon salt
- 1/2 teaspoon freshly grnd black pepper
- 1/2 teaspoon grnd cumin
- 2 cloves garlic
- 1 1/2 c. extra virgin olive oil
- Combine spinach leaves, parsley, vinegar, basil, salt, pepper, cumin and garlic in food processor; process till smooth.
- With machine running, slowly add in 1/2 c. of the oil; add in remaining oil all at once.
- Process till smooth.
- Store dressing in tightly covered container in refrigerator up to 3 weeks.
