Call The Neighbors, Edna! Tomatillo Salsa
- 2 pounds Tomatillos
- 1 bunch Cilantro
- 4 cloves Garlic
- 1 whole Jalapeno Pepper
- 2 whole Limes
- 1 teaspoon Salt
- 1/2 teaspoons Fresh Cracked Black Pepper
- Remove husks from tomatillos and wash tomatillos in warm water to remove any bits of dirt.
- Remove stem area at top, like you would a tomato.
- Cut in half and place in food processor bowl.
- Cut jalapeno pepper in half lengthwise.
- Remove seeds and ribs from only ONE of the halves; keeping in the other half.
- (Note: if you really like your salsa hot and spicy, then keep the seeds and ribs in both halves.)
- Place in processor.
- Peel garlic cloves and add to processor.
- Trim the end of the cilantro bunch; cut bunch in half and add.
- Juice the two limes into the processor bowl.
- Add salt and pepper.
- Pulse mixture about 5 times to get things moving and chopped up.
- Continue another 5 times or so until salsa is of thick consistency.
- Enjoy!
- Refrigerate any leftovers (HA!)
- in an air-tight container.
- Will keep for a week in the fridge!
