Chicken Italiano
- 2 slices reduced-sodium bacon, chopped Rite Aid 2 For $7.00 thru 02/06
- 2 lb. (900 g) boneless skinless chicken thighs King Sooper's 1 lb For $1.19 thru 02/09
- 3 carrots, peeled, sliced
- 2 stalks celery, sliced
- 1 onion, chopped Safeway 3 lb For $2.99 thru 02/09
- 1 jar (650 mL) Classico di Napoli Tomato & Basil Pasta Sauce
- 1/4 cup Kraft Calorie-Wise Zesty Italian Dressing
- 4 cups fibre-enriched white penne pasta, uncooked
- 1/4 cup chopped fresh basil
- 2 Tbsp. Kraft 100% Parmesan Light Grated Cheese
- Cook and stir bacon in Dutch oven or large deep skillet on medium heat until crisp.
- Remove bacon from pan with slotted spoon; drain on paper towels.
- Add chicken to drippings in pan; cook 3 min.
- on each side or until browned on both sides.
- Transfer chicken to plate.
- Add vegetables to drippings in pan; cook 5 min., stirring frequently.
- Stir in pasta sauce and dressing.
- Add chicken and any juices from plate; simmer on medium-low heat 35 min.
- or until chicken is done (170 degrees F), stirring occasionally.
- Meanwhile, cook pasta as directed on package, omitting salt.
- Drain pasta; place on plate.
- Top with chicken mixture; sprinkle with bacon, basil and cheese.
