Aubergine Flavoured Rice ( Vanghi Bhaat ) Recipe

  1. Heat the oil in a heavy bottomed pan and add in the cumin seeds.
  2. Stir for a minute and add in the onion and curry leaves.
  3. When the onion is golden brown add in the aubergines and stir fry for a couple of min.
  4. Add in the rice spices and salt.
  5. Mix and fry till the rice becomes translucent/soft.
  6. Add in 600ml warm water stir and bring to the boil.
  7. Then reduce the heat cover and simmer till the rice is cooked and fluffy.
  8. Remove from the heat and serve warm garnished with coriander and lemon wedges.
  9. A festive nce dish from Maharashtra and is often served at weddings.
  10. Serves 4
