Aubergine Flavoured Rice ( Vanghi Bhaat ) Recipe
- 4 Tbsp. sunflower oil
- 1 tsp cumin seeds
- 1 lrg onion minced
- 12 x curry leaves
- 300 gm aubergines cued
- 300 gm basmati rice
- 1 tsp turmeric pwdr
- 1 tsp chilli pwdr
- 1 tsp garam masala pwdr
- 4 Tbsp. coriander leaves minced
- 4 x wedges of lemon salt
- Heat the oil in a heavy bottomed pan and add in the cumin seeds.
- Stir for a minute and add in the onion and curry leaves.
- When the onion is golden brown add in the aubergines and stir fry for a couple of min.
- Add in the rice spices and salt.
- Mix and fry till the rice becomes translucent/soft.
- Add in 600ml warm water stir and bring to the boil.
- Then reduce the heat cover and simmer till the rice is cooked and fluffy.
- Remove from the heat and serve warm garnished with coriander and lemon wedges.
- A festive nce dish from Maharashtra and is often served at weddings.
- Serves 4
