Quick Pumpkin Bread
- 1 3/4 c. sifted all-purpose flour
- 1/4 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1/2 tsp. cinnamon
- 1/4 tsp. ground cloves
- 1 1/3 c. sugar
- 1/3 c. shortening (can use butter)
- 2 eggs
- 1 c. canned pumpkin
- 1/3 c. milk
- 1/2 tsp. vanilla
- Sift together flour, baking powder, baking soda, salt, cinnamon and cloves.
- In a large bowl, beat until light and fluffy the sugar, shortening and eggs, then beat in pumpkin.
- Add dry ingredients, 1/3 at a time, alternately with milk and vanilla.
- If desired, fold into batter 1/2 cup of coarsely chopped nuts.
- Pour batter into a greased pan and bake about 1 hour or until bread tests done (clean toothpick).
- Yield: Makes 1 (9 x 5-inch) loaf.
