Quick Pumpkin Bread

  1. Sift together flour, baking powder, baking soda, salt, cinnamon and cloves.
  2. In a large bowl, beat until light and fluffy the sugar, shortening and eggs, then beat in pumpkin.
  3. Add dry ingredients, 1/3 at a time, alternately with milk and vanilla.
  4. If desired, fold into batter 1/2 cup of coarsely chopped nuts.
  5. Pour batter into a greased pan and bake about 1 hour or until bread tests done (clean toothpick).
  6. Yield: Makes 1 (9 x 5-inch) loaf.
