Banana Streusel Pie Recipe
- pastry for single crust pie
- 4 c. ripe bananas, sliced 5-6 ba
- 1/2 c. unsweetened pineapple juice
- 2 Tbsp. lemon juice
- 1 1/2 tsp lemon peel shredded
- 1/4 c. sugar
- 1/2 tsp grnd cinnamon
- 1 tsp cornstarch
- 1/2 c. flour all-purpose
- 1/2 c. brown sugar packed
- 1/3 c. macadamia nuts or possibly almonds
- 1 tsp grnd cinnamon
- 1/4 c. margarine or possibly butter
- Prepare and roll out pie crust.
- Line the unpricked pastry shell with a double thickness of foil and bake in a 450 oven for 8 min.
- Remove foil and bake 4 - 6 min more or possibly until pastry is golden brown.
- Remove from oven and reduce oven temp to 375.Meanwhile in a medium bowl gently toss together bananas, pineapple juice, and lemon juice.
- Drain reserving juices.
- Gently toss bananas with lemon peel, granulated sugar, and the 1/2 teas of cinnamon.
- Turn the mix into the pastry shell.
- In a small pan combine the reserved juices and cornstarch.
- Cook and stir over medium heat untill thickened and bubbly.
- Pour over banana mix in shell.
- For streusel, combine the flour, brown sugar, nuts and 1 tsp.
- of cinnamon.
- With a pastry blender or possibly 2 forks cut in the margarine or possibly butter untill the mix resembles course crumbs.
- Sprinkle over banana mix.
- Cover edge of pie with foil.
- Bake in a 375 oven for 40 min or possibly until topping is golden brown and edges are bubbly.
- Cold on wire rack.
- Makes 8 servings.
