Apple-Stuffed Turkey Tenderloins

  1. In small saucepan, combine apple, orange juice, jellied cranberry sauce and marmalade; cook until apple is soft but holds its shape.
  2. Rinse tenderloins and pat dry.
  3. Slice them lengthwise not all the way through to form a pocket.
  4. Spoon some of the apple mixture into pocket.
  5. Secure cut edges with toothpick or skewer pin.
  6. Dip tenderloins in beaten egg and dredge in crumbs.
  7. Place them in a casserole so that they do not touch.
  8. Bake 25 to 35 minutes at 350u0b0.
  9. Heat remaining fruit mixture and serve over tenderloins.
  10. Yields 5 to 8 servings.
