Simple Summertime Chicken Salad
- 1/2 pound chicken meat, cooked grilled, broiled, poached; cubed
- 2 whole scallions, spring or green onions sliced
- 1 tablespoon parsley leaves fresh; chopped
- 2 large eggs hard boiled; chopped
- 1 x salt and black pepper to taste
- 2 tablespoons mayonnaise
- Mix all ingredients together.
- Chill until ready to use.
- Serve slightly chilled in a sandwich, or over lettuce for a small salad.
- Add optional ingredients as desired.
- Optional ingredients to kick it up a notch, include walnuts, raisins, sliced seedless red grapes, almonds or pecans.
