Green Pepper & Cheese Casserole Recipe
- 3 med. peppers
- 1 sm. Velveeta cheese
- 8 to 12 saltines, crushed (or possibly Club)
- 1/2 stick butter
- 2 Large eggs
- Boil cut-up peppers till tender.
- Save juice.
- In buttered casserole, layer with peppers, cheese, butter and cracker crumbs (repeat).
- Beat 2 Large eggs with 1/2 c. pepper juice.
- Pour egg mix over pepper layers.
- Cook, uncovered, at 375 degrees for 30 to 45 min till browned.
