Green Pepper & Cheese Casserole Recipe

  1. Boil cut-up peppers till tender.
  2. Save juice.
  3. In buttered casserole, layer with peppers, cheese, butter and cracker crumbs (repeat).
  4. Beat 2 Large eggs with 1/2 c. pepper juice.
  5. Pour egg mix over pepper layers.
  6. Cook, uncovered, at 375 degrees for 30 to 45 min till browned.
