Jessica's Best Fried Chicken
- oil, enough to cover about half of thickness of chicken slices when in skillet
- 3 -4 lbs boneless skinless chicken breasts, cut into slices
- 4 eggs
- 1 tablespoon milk
- 3 cups all-purpose flour
- 12 tablespoon season salt
- Set up assembly line of bowls: (1) raw, sliced chicken; (2) milk and eggs, whisked; (3) flour and seasoned salt; (4) skillet with oil on medium/high heat.
- Make sure oil is HOT before starting.
- Dip chicken in milk/egg mixture.
- Coat with flour/salt mixture.
- Carefully place chicken in skillet.
- Let cook for about 5 minutes, do NOT turn chicken until necessary.
- The key is to ONLY turn the chicken over ONCE!
- Cook about 3-5 minutes on each side, or until chicken is cooked through.
- Place on plate with paper towel to absorb oil.
