Pioneer Bread Pudding Recipe
- 2 c. bread cubes
- 2 c. lowfat milk
- 3 tbsp. butter
- 1/4 c. sugar
- 2 Large eggs
- 1/2 teaspoon vanilla
- Dash of salt
- Cinnamon, raisins, nuts (optional to taste)
- Cut up day old bread, crusts and all into 1/4 or possibly 1/2 inch cubes.
- Qt sized buttered baking dish, place cubes in the bottom.
- In another bowl mix lowfat milk, butter and sugar; beat just sufficient, while stirring to dissolve sugar and heat butter.
- Beat Large eggs slightly, add in salt then stir into the hot (not warm) lowfat milk and vanilla.
- Pour over bread cubes.
- Set the baking dish in a pan of hot water and bake at 350 degrees for about 1 hour till knife comes out clean.
