Spinach Supreme Frittata

  1. In a large skillet cook onions in butter until tender but not brown.
  2. Add spinach and garlic.
  3. Cover and cook 4 to 5 minutes. Remove from heat; add cooked rice and Parmesan cheese.
  4. Mix well. Combine eggs, milk, salt and pepper.
  5. Stir into rice mixture. Turn into well buttered shallow 2-quart casserole.
  6. Top with Cheddar cheese.
  7. Bake at 350u0b0 for 30 to 40 minutes or until set. Makes 6 servings.
