Spinach Supreme Frittata
- 1/2 c. finely chopped onions
- 2 Tbsp. butter or margarine
- 1 pkg. (10 oz.) frozen chopped spinach
- 1 clove garlic, crushed
- 3 c. cooked rice
- 1/2 c. grated Parmesan cheese
- 4 eggs, slightly beaten
- 1/2 c. milk
- 2 tsp. salt
- 1/4 tsp. black pepper
- 1/2 c. grated Cheddar cheese
- In a large skillet cook onions in butter until tender but not brown.
- Add spinach and garlic.
- Cover and cook 4 to 5 minutes. Remove from heat; add cooked rice and Parmesan cheese.
- Mix well. Combine eggs, milk, salt and pepper.
- Stir into rice mixture. Turn into well buttered shallow 2-quart casserole.
- Top with Cheddar cheese.
- Bake at 350u0b0 for 30 to 40 minutes or until set. Makes 6 servings.
