Wild And Tender
- 2 (8 to 12 oz.) beef tenderloin steaks
- 2 stalks celery
- 1/2 head broccoli, cut up
- 4 small carrots
- 1 small onion, diced
- 1 oz. cooking wine
- salt and pepper to taste
- 1/2 tsp. garlic salt
- 1/2 to 1 tsp. basil
- 1/2 tsp. oregano
- wild rice, cooked
- 3 to 4 oz. grated cheese (optional)
- Marinate beef 15 to 20 minutes in wine mixed with salt, garlic salt and pepper.
- In baking dish add 1/4 inch of water, onions, celery,
- carrots, broccoli, basil and oregano.
- Cover withtoil and
- steamtegetables until tender.
- Prepare rice following directionstn
- package.
- Grill
- meat
- to
- desired doneness. After
- meat
- is
- cooked,
- cut
- into
- pieces.
- On
- a platter, arrange
- bed
- of
- rice.
- Place
- meat
- on rice and add steamed vegetables to the edge.
- Cover vegetables with grated cheese while hot to insure melting.
- Serves 2.
