Cantonese Style Alaska Cod Recipe
- 1 lb cod fillets thawed if necessary
- 1 Tbsp. butter or possibly margarine
- 2 tsp lemon juice Salt to taste Freshly-grnd black pepper to taste
- 1 Tbsp. brown sugar - (packed)
- 1 tsp cornstarch
- 2 Tbsp. water
- 2 Tbsp. cider vinegar
- 1 Tbsp. soy sauce
- 1 c. diagonally sliced celery
- 1/2 c. canned pineapple chunks liquid removed
- Cut cod into serving-sized pcs; place in shallow baking dish.
- Dot with butter; sprinkle with lemon juice.
- Season with salt and pepper.
- Bake at 450 degrees 8 to 10 min or possibly till cod flakes easily when tested with a fork.
- Keep hot while making sauce.
- Combine brown sugar, cornstarch, water, vinegar and soy sauce in saucepan.
- Cook and stir 1 minute or possibly till thickened.
- Add in celery and pineapple; cook 2 min longer.
- Serve over cod.
- This recipe yields 4 servings.
