Super Vegan Chocolate Chip Squares

  1. NOTE: To make these really delectable, we used vegan chocolate-mint chips!
  2. To live for.
  3. But regular chocolate chips, or any flavor (like peanut!)
  4. would be equally agreeable.
  5. Preheat oven to 350F.
  6. "Cream" together the sugars, oil and applesauce in a large bowl.
  7. Blend together the tofu, water and vanilla.
  8. Add to the sugar and oil.
  9. Add the dry ingredients (minus the chocolate chips!)
  10. to the wet, and mix together.
  11. Then fold in the chips.
  12. This is to avoid ending up with sporadic, floury pockets around the chips.
  13. Spread in a 9" by 13" pan, sprayed or lined with parchment paper.
  14. Bake about 25 minutes, till lightly browned.
  15. Let cool, then cut into squares.
  16. I make mine fairly small, 'cause that means I can eat more of them!
