Super Vegan Chocolate Chip Squares
- 34 cup white sugar
- 34 cup brown sugar
- 13 cup oil
- 12 cup applesauce
- 13 cup silken tofu, mashed
- 14 cup water
- 1 teaspoon vanilla
- 3 12 cups unbleached flour (could also use whole wheat pastry, if desired)
- 1 12 teaspoons baking powder
- 1 teaspoon baking soda
- 14-12 teaspoon salt
- 1 cup chocolate chips (see note)
- NOTE: To make these really delectable, we used vegan chocolate-mint chips!
- To live for.
- But regular chocolate chips, or any flavor (like peanut!)
- would be equally agreeable.
- Preheat oven to 350F.
- "Cream" together the sugars, oil and applesauce in a large bowl.
- Blend together the tofu, water and vanilla.
- Add to the sugar and oil.
- Add the dry ingredients (minus the chocolate chips!)
- to the wet, and mix together.
- Then fold in the chips.
- This is to avoid ending up with sporadic, floury pockets around the chips.
- Spread in a 9" by 13" pan, sprayed or lined with parchment paper.
- Bake about 25 minutes, till lightly browned.
- Let cool, then cut into squares.
- I make mine fairly small, 'cause that means I can eat more of them!
