Heart Healthy Apple Pancakes
- 1 13 cups whole wheat all-purpose flour
- 12 teaspoon salt
- 12 teaspoon cinnamon
- 1 egg
- 1 tablespoon honey
- 1 cup low-fat milk
- 1 tablespoon applesauce
- 1 medium apple, peeled, sliced thinly, and cut into bite-sized pieces
- chopped walnuts (optional)
- confectioners' sugar (optional)
- In a bowl, blend the flour, salt and cinnamon together.
- In a separate bowl, whisk the egg.
- Add honey, milk and applesauce.
- Add to dry ingredients and mix until incorporated.
- Fold in apples and walnuts (optional).
- Pour by 1/2-cupfuls onto a lightly greased hot griddle, then spread into large circles.
- Flip pancakes when bubbles form.
- Cook until golden brown and apples are tender.
- Top with remaining applesauce and a sprinkle of confectioners sugar.
