Red Pepper Eggplant
- 1 avocado
- 1/2 cup roasted red pepper hummus
- 1 eggplant
- 4 slice mozzarella
- 1 red pepper
- 1 pinch basil
- 1/3 cup olive oil
- preheat oven to 380
- scoop out avocado and smash or blend until soft
- combine avocado with hummus
- slice eggplant into four sections
- sprinkle basil on each section and brown on both sides in frying pan
- add chopped up red peppers to frying pan.
- add half of the olive oil.
- next, place eggplant and peppers into glass baking dish
- place sliced mozzarella on the eggplant and top with the sauce.
- add the rest of the oil and sprinkle more basil on top.
- bake for 45 minutes or until eggplant is soft
