Cranberry Chicken(So Easy, So Good!)
- 4 chicken breast halves or boneless breasts, without skin
- 1 1/2 c. whole berry cranberry sauce
- 1 c. chopped apples
- 1/2 c. raisins or prunes
- 1/4 c. walnuts
- 1 Tbsp. curry powder
- 1 pkg. spaghetti sauce mix
- 1 (6 oz.) can tomato paste
- 1 (8 oz.) can tomato sauce
- 1 3/4 c. cold water
- 2 eggs
- 1 (15 oz.) container Ricotta or 1 lb. creamed cottage cheese
- 1/2 tsp. salt
- 1 (10 oz.) pkg. frozen, chopped spinach, thawed and drained
- 1/2 c. grated Parmesan cheese
- 1/2 lb. sliced Mozzarella cheese
- 1/2 lb. uncooked lasagne noodles, broken in half
- 4 boneless and skinless chicken breasts
- salt and pepper
- 1 Tbsp. olive oil
- 1 Tbsp. butter
- 3 Tbsp. finely chopped shallots
- 1 tsp. finely chopped garlic
- 2 tsp. tarragon (fresh) or 1 tsp. dried
- 4 ripe plum tomatoes, cut in small cubes
- 2 Tbsp. red wine vinegar
- 4 Tbsp. drained capers
- 1/2 c. dry white wine
- 1 Tbsp. tomato paste
- 4 Tbsp. fresh parsley, chopped
- Sprinkle the chicken breasts with salt and pepper and pound to flatten.
- Heat the oil and butter in a skillet and add the chicken breasts and saute until lightly brown (about 5 minutes).
