Triple Coconut Whipped Cream
- 1 12 cups cold heavy cream
- 14 cup coconut milk (unsweetended, recommended -- Cocoa Lopez)
- 2 tablespoons confectioners' sugar or 2 tablespoons granulated sugar
- 1 teaspoon coconut rum
- 12 teaspoon pure vanilla extract
- 12 cup lightly toasted sweetened coconut (optional)
- Combine heavy cream, coconut milk, sugar, rum and vanilla in a mixer and mix until soft peaks form.
- Serve with cake, pie, or fresh fruit.
- Garnish with toasted coconut.
