Gina's Basic Spaghetti Sauce

  1. Prepare the tomatoes: drop them into a pot of boiling water for about a minute.
  2. Drain and rinse with cold water.
  3. Slip off the skins, cut out the "core", and coarsely chop.
  4. Set aside.
  5. In a large pot, heat the oil.
  6. Add onion and fennel seed.
  7. Fry a couple minutes.
  8. Add the pepper and garlic and fry a couple more minutes (don't let the precious garlic brown or burn, please!
  9. ).
  10. Add the rest of the ingredients.
  11. Bring to a boil, lower heat, then simmer for as long as you can (at least an hour), stirring occasionally.
