Captain's Club With Shrimp and Chipotle Mayonnaise (+ Healthy Va
- 12 slices bread, toasted
- 8 ounces bacon, cooked
- 1 lb bay shrimp, cooked
- 2 stalks celery, diced
- 12 cup mayonnaise
- 12 teaspoon chipotle chili pepper
- 1 tablespoon lime juice
- 1 tablespoon fresh cilantro, chopped
- 2 tomatoes, sliced
- 1 avocado, peeled and sliced
- sea salt
- fresh cracked black pepper
- Combine shrimp, celery, mayo, lime juice and cilantro.
- Season with salt and pepper.
- Top one slice of toast with 1/4 c shrimp mixture and 3 tomato slices.
- Place slice of toast on top.
- For captain club: Add 1/4 c shrimp mixture, 2 avocado slices, 2 slices bacon and another slice of toast.
- Repeat for each.
