Captain's Club With Shrimp and Chipotle Mayonnaise (+ Healthy Va

  1. Combine shrimp, celery, mayo, lime juice and cilantro.
  2. Season with salt and pepper.
  3. Top one slice of toast with 1/4 c shrimp mixture and 3 tomato slices.
  4. Place slice of toast on top.
  5. For captain club: Add 1/4 c shrimp mixture, 2 avocado slices, 2 slices bacon and another slice of toast.
  6. Repeat for each.
