Kipper Pate Slices with Cucumber Dressing

  1. Roll out the pastry to form a 10 inch square.
  2. Cut in half then cut each piece lengthways to give 12 slices.
  3. Brush with beaten egg and place on a baking sheet.
  4. Bake at 200 cup (400 F ) mark 6 for about 10 min, or until risen and golden.
  5. Meanwhile mix together the pate, cream and lemon juice.
  6. Season.
  7. Combine the remaining ingredients to give the cucumber dressing a runny consistency, seasoning to taste.
  8. Cool pastry on a wire raek, trim and sandwich in pairs with pate.
  9. Arrange on plates with dressing and garnish with lemon slices and cucumber.
  10. Serve cold.
