Spinach, Feta, Tomato Quiche
- 1 frozen pie shell (thawed)
- 4 eggs
- 1 1/2 cup fresh baby spinach
- 1/2 cup roughly chopped fresh mushrooms
- 2 clove minced garlic
- 3 tbsp chopped purple onion
- 15 grape tomatoes halved
- 1/2 tbsp salt (I use Celtic gray salt)
- 1/2 tsp black pepper
- 3/4 cup feta crumbles
- 1/2 tsp baking powder
- Take pie shell out to thaw and preheat your oven to 350.
- Beat 4 eggs in a bowl then add the salt, pepper, and baking powder.
- Add all the other ingredients and mix until the spinach has wilted a little.
- Pour egg mixture into your pie crust and bake for about 50 minutes.
- Let set for at least 30-45 minutes.
- Enjoy!
