Chili Topped Potatoes Recipe

  1. In large skillet brown meat; drain fat.
  2. Stir in corn, tomatoes, ketchup, pepper and chili pwdr.
  3. Cover and simmer 10 min.
  4. Slit potatoes; spoon meat mix over each.
  5. Garnish with lowfat sour cream, grated cheese and diced chives, if you like.
  6. This is a very colorful topping and can be prepared while the potatoes bake in a microwave.
