Chili Topped Potatoes Recipe
- 4-6 baked potatoes
- 1/2 pound grnd beef
- 1 (17 ounce.) can whole kernel corn, liquid removed
- 1 (14 ounce.) can stewed tomatoes
- 1/2 c. ketchup
- 1/2 c. minced green pepper
- 1-2 teaspoon chili pwdr
- In large skillet brown meat; drain fat.
- Stir in corn, tomatoes, ketchup, pepper and chili pwdr.
- Cover and simmer 10 min.
- Slit potatoes; spoon meat mix over each.
- Garnish with lowfat sour cream, grated cheese and diced chives, if you like.
- This is a very colorful topping and can be prepared while the potatoes bake in a microwave.
