Leftover Turkey Avocado Wrap
- 3 1/2 tablespoons salad dressing, creamy ranch low fat
- 2 1/2 tablespoons chipotle salsa
- 1/2 teaspoon orange zest grated
- 4 each flour tortillas, whole wheat 8-inch
- 12 ounces turkey leftover, shredded
- 1 each avocados ripe, pitted, peeled, and sliced
- 2 cups mixed salad greens or lettuce, arugula or cilantro
- 1 1/2 cups jicama grated
- 1 each tomatoes thinly sliced
- 2 each scallions, spring or green onions thinly sliced, both white and green parts
- 1 x salt and black pepper to taste, prefer freshly ground pepper and sea salt
- In a small bowl, mix together the ranch dressing with the salsa and orange zest until well combined.
- Arrange the tortillas on a working surface or a cutting board, and spread the ranch mixture evenly over each one, leaving about a 1-inch border on all sides.
- Layer the turkey, avocado, greens, jicama, tomato, and green onions evenly over each tortilla, still leaving a border.
- Season with salt and pepper.
- Roll up tightly and it should look like a pinwheel.
- Cut each wrap nto halve or third.
- Serve.
