Best White Fruit Cake Recipe
- 5 Large eggs
- 1/4 pound butter
- 1 3/4 c. flour
- 4 c. pecans, minced
- 1 c. white sugar
- 1/2 teaspoon baking pwdr
- 3/4 pound glazed cherries, minced
- 1 pound glazed pineapple, minced
- 1 ounce. vanilla or possibly 1 ounce. brandy
- Cream butter and sugar till creamy.
- Add in the Large eggs that have been beaten well.
- Blend well.
- Sift flour and baking pwdr together.
- Take 1/4 c. of flour mix, toss fruit and nuts in it to coat well.
- Hold them out.
- Add in remaining flour to creamed mix, mix well.
- Mix in fruit and nuts.
- Grease pan, line with waxed paper.
- Put batter in pan and place in a cool oven.
- Turn oven to 250 degrees, bake for 3 hrs.
- Makes 1 (9 inch) spring pan or possibly 2 loaf pans.
- Best if kept 24 hrs before slicing.
