Healthy Jambalaya

  1. Saute onions, pepper, celery and garlic in margarine in a 4-quart Dutch oven over medium heat until softened.
  2. Add tomatoes, chicken broth, tomato paste and seasonings; simmer for 10 minutes. Add rice; cover and simmer for 10 minutes.
  3. Add ham, chicken and shrimp.
  4. Continue cooking, covered, for 10 to 15 minutes, or until rice absorbs liquid.
  5. Remove bay leaf before serving.
