Chicken Marengo

  1. Season chicken with salt and pepper.
  2. In a large frying pan, heat oil over medium heat.
  3. Add chicken and brown lightly on both sides, about 8 minutes.
  4. Remove and set aside.
  5. Remove all but 3 tablespoons fat from the pan.
  6. Add onions, garlic and mushrooms and cook until tender, about 5 minutes.
  7. Return chicken to pan.
  8. Sprinkle with parsley, thyme, rosemary and bay leaf.
  9. Add tomatoes and wine, partly cover and simmer 45 minutes, until chicken is tender.
  10. Remove bay leaf and serve.
