Easy Zucchini Casserole

• 1 egg yolk
• 1 cup BREAKSTONE'S or KNUDSEN Sour Cream
• 1 Tbsp. finely chopped onions Safeway 3 lb For $2.99 thru 02/09
• 1/2 tsp. paprika
• 3/4 lb. (12 oz.) VELVEETA, cut into 1/2-inch cubes
• 5 zucchini, thinly sliced
• 4 tomatoes, sliced Safeway 1 lb For $1.29 thru 02/09
• 2 cups croutons
• 1 Tbsp. butter, cut into small pieces

1. Heat oven to 350F.
2. Mix first 4 ingredients in medium bowl until blended.
3. Stir in VELVEETA.
4. Spread zucchini onto bottom of 13x9-inch pan sprayed with cooking spray; cover with sour cream mixture.
5. Top with remaining ingredients.
6. Bake 45 min.
7. or until zucchini is tender and casserole is heated through.
