Easy Zucchini Casserole
- 1 egg yolk
- 1 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 1 Tbsp. finely chopped onions Safeway 3 lb For $2.99 thru 02/09
- 1/2 tsp. paprika
- 3/4 lb. (12 oz.) VELVEETA, cut into 1/2-inch cubes
- 5 zucchini, thinly sliced
- 4 tomatoes, sliced Safeway 1 lb For $1.29 thru 02/09
- 2 cups croutons
- 1 Tbsp. butter, cut into small pieces
- Heat oven to 350F.
- Mix first 4 ingredients in medium bowl until blended.
- Stir in VELVEETA.
- Spread zucchini onto bottom of 13x9-inch pan sprayed with cooking spray; cover with sour cream mixture.
- Top with remaining ingredients.
- Bake 45 min.
- or until zucchini is tender and casserole is heated through.
