Caramel-Rice Pudding with Marshmallow Topping

  1. Bring water and rice to boil in large saucepan; cover.
  2. Simmer on low heat 15 min.
  3. Stir in milk; cook; uncovered, 25 min.
  4. or until rice is tender, stirring frequently.
  5. (Do not overcook.
  6. Mixture should resemble thick cooked oatmeal.)
  7. Add caramels; cook 5 min.
  8. or until melted, stirring frequently.
  9. Stir in vanilla.
  10. Pour into 2-qt.
  11. casserole; top with marshmallows.
  12. Heat broiler.
  13. Broil pudding, 6 inches from heat, 3 to 5 min.
  14. or until marshmallows are lightly browned.
  15. Serve immediately.
