Sugar-Crusted Rhubarb Squares
- 2 1/2 c. flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 1/2 c. brown sugar, packed
- 1 egg, beaten
- 2/3 c. cooking oil
- 1 c. sour milk (1 Tbsp. vinegar plus milk to make 1 cup; let sit 5 minutes)
- 1 tsp. vanilla
- 1 1/2 c. finely diced rhubarb
- 1/2 c. chopped nuts
- 1/2 c. sugar
- 1 Tbsp. melted butter or margarine
- 1/2 tsp. ground cinnamon
- Stir together flour, baking soda, salt and brown sugar in bowl. Combine oil, egg, sour milk and vanilla. Add to dry ingredients, blending well. Stir in rhubarb and nuts. Spread batter in greased 9-inch square baking pan. Combine sugar, butter and cinnamon. Sprinkle over batter. Bake in preheated 325u0b0 oven 55 minutes or until done. Cut in squares and serve warm or cold. Makes 9 servings.
