Lunchbox Cookies
- 1/2 c. firmly packed brown sugar
- 1/2 c. powdered sugar
- 1/2 c. butter or margarine, softened
- 1/2 c. shortening
- 1/2 tsp. vanilla
- 1 egg
- 1 3/4 c. all-purpose flour
- 1/2 c. whole wheat flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cream of tartar
- 1 c. chopped peanuts
- 1 (7 1/2 oz.) pkg. almond brickle baking chips
- 1/4 c. sugar
- Heat oven to 350u0b0.
- In large bowl, combine brown sugar, powdered sugar, margarine and shortening; beat until light and fluffy.
- Add vanilla and egg; blend well.
- Spoon flour into measuring cup; level off.
- Add flours, baking soda, salt and cream of tartar.
- Blend at low speed until well mixed.
- Stir in peanuts and almond chips.
- Shape heaping tablespoons into balls (using dough).
- Roll in sugar.
