Mozzarella and Tomato Panini
- 2 Tablespoons Olive Oil
- 2 slices Rustic Bread (ciabatta, Tuscan, Etc.)
- 2 slices Buffalo Mozzarella (thick)
- 2 slices Tomato
- 5 whole Basil Leaves
- Salt And Pepper, to taste
- Brush olive oil on the outer sides of the two slices of bread.
- Layer cheese, tomato and basil leaves on top of the bottom slice of bread and season with salt and pepper.
- Top with the second slice of bread, olive oil side out, and place on a hot panini press or Foreman grill for 3-5 minutes or until bread is golden brown and cheese has started to melt slightly.
- Remove from heat and let rest for a minute and then devour.
- ***Also great as a cold sandwich, just turn the olive oil brushed sides inward.
