Mozzarella and Tomato Panini

  1. Brush olive oil on the outer sides of the two slices of bread.
  2. Layer cheese, tomato and basil leaves on top of the bottom slice of bread and season with salt and pepper.
  3. Top with the second slice of bread, olive oil side out, and place on a hot panini press or Foreman grill for 3-5 minutes or until bread is golden brown and cheese has started to melt slightly.
  4. Remove from heat and let rest for a minute and then devour.
  5. ***Also great as a cold sandwich, just turn the olive oil brushed sides inward.
