For Bentos Chicken and Umeboshi Bake
- 2 pieces Chicken thighs
- 1 Umeboshi
- 1 Salt
- 1 for frying Oil
- 1 Sake
- Slice the chicken diagonally so it is half the thickness, and open up.
- Remove the seed from the umemoshi, mince it, and spread it on the chicken.
- Fold the chicken back to its original shape.
- Season well with salt.
- Thinly coat a frying pan with oil, and cook, skin side down, until it starts to brown.
- Turn it over and add some sake.
- Put the lid on, and let it cook through.
